Easy Gluten-Free Zucchini Bread Recipe For Celiac Diet
You don't need to eat a gluten-free diet to try this recipe. I get asked all the time by friends and family what they should bake for a friend that can only eat gluten-free food.
It's great to have a few gluten-free recipes on hand that you can bake for company. This is a great one and a good switch from the traditional banana bread!
GLUTEN-FREE Zucchini Bread RECIPE
Pre-heat your oven to 375 F, after you put the muffins in the oven reduce heat to 350 F.
Grate 2 cups of zucchini in a mixing bowl. Cream together ½ cup melted butter, 1 cup white sugar, 1 tsp vanilla, and 2 eggs. Make sure not to over beat the ingredients.
Add 1 ½ cups of All-Purpose Gluten-Free Flour, 1 tsp baking soda, ½tsp salt, ¼ tsp nutmeg, 1 tsp cinnamon.
Grease bread pan with butter, add batter, bake for 55 minutes at 350 F.

- ½ tsp salt
- ¼ tsp nutmeg
- 1 tsp cinnamon
- Preheat to 375, Bake at 350
- Grate 2 cups of zucchini
- Mix melted butter, sugar, vanilla extract, eggs in with zucchini
- Add flour, baking soda. salt. nutmeg, cinnamon
- Mix until dry ingredients are absorbed, don't over mix
- Green bread pan with butter, add batter
- Place the bread pan in the oven and reduce heat to 350 F
- Bake for 55 minutes
