Forget about regular muffins, these Gluten-Free Banana Muffins will give all other muffins a run for their money! It's been over 10 years of me baking gluten-free recipes, so believe me when I say how good these are.
There are so many people now that need to eat on a gluten-free diet due to sensitivities, or, like Greg because of Celiac disease. We get more questions about cooking and baking gluten-free recipes than anything else. We are happy to be sharing out recipes with all of you, after 10 years of perfecting them 🙂
I am going to have to get Greg to way in on some of these next gluten-free recipes we share to give you a little reference. We seem to be the perfect match when baking gluten-free. He judges how they compare to other gluten free foods he has eaten over the last 30 years and I compare them to regular food (non-gluten free).
On to the muffins! After much trial and error, these are now our favourite muffin recipe, and we would love for you to try them!
Gluten-Free Banana Muffin Recipe
Pre-heat your oven to 375 F, after you put the muffins in the oven reduce heat to 350 F.
Mash 3 ripe bananas in a mixing bowl. Cream together ½ cup melted butter, 1 cup white sugar, 1 tsp vanilla, and 2 eggs. Make sure not to over beat the ingredients.
Add 1 ½ cups of All-Purpose Gluten-Free Flour, 1 tsp baking soda, ½tsp salt, ¼ tsp nutmeg, 1 tsp cinnamon.
Grease muffin pan with butter, add batter, making 12 muffins and bake for 35 minutes.

Gluten-Free Banana Muffins
Ingredients
- 3 ripe bananas
- ½ cup melted butter
- 1 cup white sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 ½ cup gluten-free all purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ¼ tsp nutmeg
- 1 tsp cinnamon
Instructions
- Preheat to 375, Bake at 350
- Mash Bananas
- Mix melted butter, sugars, vanilla extract, egg into bananas
- Add flour, baking soda, salt, nutmeg, cinnamon
- Mix until dry ingredients are absorbed, don't over mix
- Grease muffin tray with butter, add batter
- Place muffin tray in over and reduce heat to 350 F
- Bake for 35 minutes
