These gluten-free energy bites are a lifesaver in our house. About two years ago I struggled a lot with dizzy spells and occasional blackouts. I was tested for a number of things, but nothing concrete was discovered.
Over time I have made my own realizations that help to control this feeling of dizziness I experience throughout the day. One of those things is a good solid pick-me-up snack.
Now the bonus to this good, hardy snack is that my kids love and enjoy it as much as I do.
I know my kids aren't the only kids who are constantly asking for a snack. I have come quickly to realize that if the snack I provide does not sustain them for long enough, they will be back asking for yet another snack, only a few minutes later.
These energy bites are a favourite, but occasional snack in our household, because they don't last long. Not because they aren't filling, frankly just because they are so delicious.
I love having them on hand as they are a quick and easy alternative to prepackaged snacks.
What you need for gluten-free energy bites
You will need five simple ingredients to make these gluten-free energy bites. Most you will have on hand, and once you make them for the first time you will make sure to keep all the ingredients stocked in your pantry!
Gather your ingredients; you will need 1 ⅓ cups of peanut butter, 1 cup of chocolate chips, 2 cups of gluten-free rolled oats, 1 cup of ground flaxseed, ¼ cup of honey.
Place all ingredients into a mixing bowl, stopping once all dry ingredients have been absorbed. Next, roll into small 1 inch balls and place onto a baking sheet to be placed into the freezer.
Once the gluten-free energy bites are frozen. place into a freezer-safe container to be stored. This helps the bits to not stick together, as they will already be frozen before going into the same container. Recipe yields 36 bites.
When you are ready to enjoy, just pull out of the freezer and let sit for a few minutes, or pop them in your mouth frozen!
Gluten-Free 5 Ingredient No-Bake Energy Bites
These gluten-free 5 ingredient energy bites are the perfect snack to pop in your mouth on your way out the door, lasting you right up until dinner.
Ingredients
- 1 ⅓ cup Peanut Butter
- 1 cup Chocolate Chips
- 2 cups Gluten-Free Oats
- 1 cup Ground Flax Seed
- ¼ cup Honey
Instructions
- Place all ingredients into a bowl and mix thoroughly
- Roll into 1 inch round bites and place on baking sheet
- Place baking sheet into the freezer for 30 minutes
- Store energy bites in a freezer-safe container for later snacking
- Makes 36 energy bites
