    No One Will Believe These Are Gluten-Free Chocolate Chip Cookies

    Greg has tasted his fair share of gluten-free chocolate chip cookies over the past 30 years and is more than qualified to deem these as the best. And I, Aly have tasted my fair share of non-gluten free cookies to know that these are, dare I say, are even better!

    Greg was diagnosed with Celiac disease at the age of two. His parents struggled for quite some time trying to figure out what was wrong with their son. Greg spent several weeks at Sick Kids Hospital in Toronto until he was diagnosed with Celiac disease. This is where Greg's gluten-free food journey began.

    Greg and I have been married for over 10 years now. So I too am an experience gluten-free food critic. I would say I have an edge as I am able to compare all gluten-free food with the real deal. Making your desire to make these cookies even greater 😉

    Alright, let's bake some gluten-free chocolate chip cookies!

    Pre-heat your over to 375 F.

    Cream together ¾ cup melted butter, 1 cup brown sugar, ½ white sugar, 1 tsp vanilla, and 2 eggs. It is best to do this all by hand instead of using a mixer and gluten-free cookies can be over mixed easily.

    Add 2 cups of PC All-Purpose Flour Blend, 1 tsp baking soda, 1tsp Himalayan salt, ¾ cup semi-sweet chocolate chips. We have tested many brands of gluten-free flour, and have even made our own. This brand of flour has by far been more successful than all the others. That being said, if you don't have access to this flour, these cookies should still turn out.

    We recommend letting the batter sit either on the counter or in the refrigerator for 10 minutes before scooping it onto the baking sheets. These extra 10 minutes allow the batter to settle and results in fluffier cookies.

    Ingredients
      

    • ¾ cup Melted Butter
    • 1 cup Brown Sugar
    • ½ cup White Sugar
    • 1 tsp Vanilla
    • 2 Eggs
    • 2 cups PC Gluten-Free All-Purpose Flour Blend
    • 1 tsp Baking Soda
    • 1 tsp Himalayan Salt
    • ¾ cup Semi-Sweet Chocolate Chips

    Instructions
     

    • Cream together melted butter, sugars, vanilla, eggs
    • Add gluten-free flour, baking soda, salt to wet ingredients
    • Add chocolate chips
    • Let the mixture sit on the counter for 10 mins (this helps cookies to rise)
    • Scoop onto an ungreased baking sheet and place into a preheated oven
    • Bake for 11 min at 375°F

      These looks excellent. I LOVE chocolate chip cookies, and I know that brown sugar makes cookies soft and chewy, so I love that this recipe has more brown than white sugar. Thanks for sharing!
